Easy, fibre-boosting carrot salad

Quickly make any meal healthier by adding a side of this easy to meal-prep salad

Carrot salad

This salad is so easy to prepare a big portion of, so that you can keep it in a jar in the fridge. This means you can quickly add a portion of fibre to any meal.

By adding walnuts and olive oil you also increase the polyphenol and omega-3 content of this salad making it a nutritional powerhouse.


(makes 4 large servings)

Carrots (large) - 3

Extra virgin olive oil - 1 tbsp

Apple - 1/2

Walnuts - 14

Parsley (chopped) - 1 tbsp

Apple cider vinegar - 2 tbsp

Raw honey - 1/2 tsp

Sea salt - 1/4 tsp


  1. Grate the carrot and apple into a bowl

  2. Finely chop the walnuts and add to the bowl

  3. Stir through the parsley, olive oil, vinegar, honey and salt

  4. Fill into a large jar and keep in the fridge.

  5. Serve as an extra portion of veg for snacks, breakfast, lunch or dinner.
