Lentil soup to batch cook and get you through the week

Batch cooking can feel like a huge task, but this simple recipe allows you to cook more than you need so you can save the rest for those days when you have no time to cook.

Lentil soup with sourdough bread and grilled sausage

This soup is rich in protein, fibre, slowly digested carbohydrates as well as nutrients like vitamin A. Prep a big batch at the beginning of the week and eat throughout the week, or freeze in portions for later use.


Ingredients:

(serves about 8)



Sweet potato - 2

Lentils (split, red) - 2 cups

Peppers - 2

Salt - 2 tsp

Peas (frozen) - 300g

Canned tomatoes - 2 tins

Chopped onion - 2

Crushed garlic cloves - 4

Curry powder - 2/3 tbsp

Fresh coriander (chopped) - 3 tbsp

Water - 6 cups


Instructions:

  1. In a large pot sauté the onion and garlic in a tsp of olive oil or coconut oil until lightly golden, stir in the curry powder

  2. Chop the sweet potatoes and peppers into cubes and add to the pot

  3. Add the lentils, canned tomatoes, salt and water

  4. Simmer for 30 minutes

  5. Add the peas and and allow to simmer for another 5-10 minutes (until the sweet potato is soft)

  6. Serve topped with chopped coriander and a side of sourdough, wholemeal pitta, oat cakes or on its own
