Gluten-free blueberry muffins

These muffins are an answer to my dreams. They are so moist on the inside, with a delicious layer of crispiness on the outside and tart, freshness from the berries.


They are gluten-free and sugar-free, sweetened only by the banana and berries. To make them dairy-free simply replace the butter with coconut oil.


Ingredients:

1 banana

3 eggs

2 tbsp butter or coconut oil

1 tsp vanilla essence

1 tsp baking powder

1 cup oat

1 cup oat flour

1/4 tsp salt

1/2 cup blueberries (fresh or frozen)

1/2 cup raspberry (fresh or frozen)



Instructions:

Pre-heat the oven to 200 degrees C top and bottom heat

Mash the banana in a bowl

Whisk in eggs, butter and vanilla essence

Mix in the oats, oat flour, baking powder and salt until you have a well-mixed batter

Fold in the berries

Scoop into muffin baking forms

Bake for 20-25 minutes until lightly golden brown on top
